HEARTY BEEF MEATLOAF
HEARTY BEEF MEATLOAF TOPPED WITH CHEESE & TOMATO
INGREDIENTS
Greased loaf tin – 6 -8 cup capacity
1 egg
½ cup grated carrot
½ cup cooked rice
½ cup grated pumpkin
½ cup peas
½ cup beef stock
1 kilo lean beef mince
1 pair disposable gloves
Garnish
½ cup grated cheese
1 sliced tomato
1 x large mixing bowl
Mixing spoons
METHOD
Add Mince
Add grated vegetables
Add cooked Arborio rice
Add egg
Mix together with wooden spoon
Add beef stock
Use hands to mix together – wearing gloves saves mess
Turn out into greased loaf tin
Shape with back of spatula into mound loaf shape
Top with grated cheese & sliced tomato
Bake in moderate oven 350F or 180C for approximately 1 hr
Meatloaf is cooked when it is golden brown and a toothpick inserted into the centre comes out clean
Turn out onto cutting board and when cool cut into portion-controlled slices
Slices of meatloaf freeze beautifully in zip lock bags for up to 6 months
