SAVORY CHICKEN PUMPKIN DINNER

INGREDIENTS
1 kilo CHICKEN Mince
1 cup chopped pumpkin pieces
1 kilo Mixed Frozen Vegetables
2 Chicken stock cubes (good quality preservative free)
2 – 3 tbspns Coconut Oil
METHOD
Add Coconut oil to frypan and heat till sizzling
Add Chicken mince and stir
Add stock cubes
Once chicken mince is browned
Add pumpkin
Add frozen vegetables
Stir through and put lid on pan
Simmer on low heat for approximately 25 minutes
Add 1 tspn of cornflour mixed with a little water to thicken if desired
Once cooked cool before serving
Spoon into Patty Pan tin for easy portion control
Freeze the patty pan
Take out the mince patties and freeze in individual sandwich size freezer bags
Chicken mince provides important quality low fat lean protein while the pumpkin and vegetables add necessary vitamins and minerals.
Pumpkin: Adds variety and fiber and is packed with vitamins and minerals. It is an excellent source of beta-carotene, which is good for the eyes and boosts the immune system.
